For a smoother sauce, use an immersion blender to puree the sauce after simmering. Adjust the amount of habanero pepper to your desired level of heat. Remember to wear gloves when handling habaneros! If you don't have bourbon, you can substitute with rum or even a smoky scotch for a different flavor profile. This sauce is also fantastic as a marinade for chicken or pork. The sauce can be canned if you want to preserve it for a longer period. Be sure to follow proper canning procedures.
