For a vegetarian version, omit the bacon and use 1 tablespoon of olive oil to sauté the vegetables. Consider adding a smoked paprika to enhance the smoky flavor.
If you don't have long grain rice, medium or short grain will work in a pinch. Adjust the amount of liquid added accordingly.
For a richer flavor, use homemade chicken broth or vegetable broth instead of store-bought.
