For the best flavor, use high-quality, oil-packed sun-dried tomatoes. If they are dry-packed, rehydrate them in warm water for 15 minutes before chopping. The inclusion of fresh tomatoes is optional, and depends entirely on their quality. If your tomatoes are not particularly flavorful, consider omitting them altogether. The sauce will still be delicious! Feel free to add a splash of the pasta cooking water to the sauce for a richer, more emulsified texture.
