For a richer flavor, toast the quinoa in the saucepan for a few minutes before adding the broth. Feel free to substitute other vegetables, such as celery, zucchini, or bell peppers. If you don't have vegetable broth, chicken broth or water can be used as a substitute, but the flavor will be slightly different. Store leftover quinoa pilaf in an airtight container in the refrigerator for up to 3 days.
