Prepare the Chicken Broth: In a stockpot, combine the chicken, carrots, celery, and onion. Cover with water, bring to a boil, then reduce to a simmer. Cook until the chicken is cooked and starting to fall from the bone, about 1 hour and 15 minutes.

Reduce the Broth: Remove the chicken and set aside to cool. Return the bones and skin to the pot, increase the heat, and boil until the liquid reduces by half, approximately 10-15 minutes.

Strain and Season: Strain out the solids, returning the liquid to the pot. Season the broth with salt and pepper to taste.

Cook the Vegetables: Add the green beans and bean sprouts to the broth and simmer until the beans are tender, around 8 minutes. Incorporate the pulled chicken meat, mix well, and remove from heat. Strain the chicken and vegetable filling until dry and let cool completely, at least 15 minutes, before assembling the lumpia.

Assemble the Lumpia: Lay a wrapper on a flat surface and place about 1/4 cup of the chicken filling on the lower quarter. Fold the wrapper over the filling, roll once, then fold in the sides. Brush the edge with beaten egg and seal.

Fry to Golden Perfection: Heat about 1 1/2 inches of vegetable oil to 350°F (175°C) in a saucepan. Fry the lumpia in batches, turning until golden brown on all sides. Remove and drain on paper towels.

Prepare the Dipping Sauce: Combine soy sauce, rice vinegar, and minced garlic.

For a vegetarian option, substitute the chicken with firm tofu or a variety of mushrooms.

These can be made ahead and frozen before frying. Fry directly from frozen, adding a few minutes to the cooking time.
