Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C).

02

Step

Arrange squash halves, cut-side up, in a roasting pan. Prick the flesh of each half with a fork to create grooves. Sprinkle with brown sugar, cinnamon, salt, and pepper; dot with butter pieces.

03

Step

Bake in the preheated oven until the squash is tender enough to pierce easily with a fork, about 30-40 minutes.

04

Step

While the squash is baking, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbled, about 5-7 minutes; drain and discard any excess grease. Add wild rice, cranberries, and chicken stock; cook and stir until the rice and cranberries have absorbed most of the chicken stock, about 5 minutes.

05

Step

Spoon the sausage filling generously into each squash half. Return the stuffed squash to the oven and bake until the flavors have melded together beautifully, about 5-10 minutes.

For a vegetarian option, substitute the sausage with sautéed mushrooms and chopped walnuts.
Feel free to experiment with other dried fruits like cherries or apricots for a different flavor profile.
A sprinkle of toasted pecans or pumpkin seeds adds a nice textural contrast before serving.
If you don't have wild rice, brown rice or quinoa can be used as a substitute.

I skipped the maple flavoring as I don't usually like sweet dishes, and it was a very tasty squash still. Thank you!

Make sure you prick the squash well with the fork, otherwise they may burst in the oven!
