Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Lightly grease 24 non-stick mini-muffin cups. (5 minutes)

02

Step

Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed. (15-20 minutes)

03

Step

In a bowl, stir together the shredded coconut, brown sugar, whole wheat flour, cinnamon, and salt. Add the cooked quinoa and beaten eggs to the coconut mixture; stir until everything is completely combined. (5 minutes)

04

Step

Drop the quinoa mixture by the tablespoonful into the prepared mini-muffin cups. (5 minutes)

05

Step

Bake in the preheated oven until the bites are slightly crisp and golden brown. (15-20 minutes)

06

Step

Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

For a richer flavor, try toasting the shredded coconut lightly before adding it to the mixture.
These bites are great with a drizzle of honey or a dusting of powdered sugar.
