Follow The Directions

01

Step
1 hrs 15 mins

Preheat the oven to 400 degrees F (200 degrees C). Place the whole squash on a baking sheet and roast until the skin is easily pierced with a fork and the flesh is very tender, approximately 1 hour and 15 minutes.

02

Step
10 mins

Allow the squash to cool until it's comfortable to handle. Peel away the skin and discard the seeds.

03

Step
10 mins

While the squash is roasting, combine raisins, toasted pecans, parsley, fresh sage, and orange zest in a food processor. Pulse until the mixture is finely chopped. Transfer to a small bowl and set aside. Clean the food processor.

04

Step
10 mins

In the cleaned food processor, combine the warm roasted squash and drained silken tofu. Puree until the mixture is exceptionally smooth and creamy. If needed, reheat in a saucepan over medium heat.

05

Step
5 mins

Transfer the creamy squash mixture to a serving bowl or platter. Sprinkle the raisin-sage mixture generously over the top and serve immediately.

For an even richer flavor, try browning the butter before roasting the squash. Drizzle the browned butter over the squash before it goes into the oven.
If you don't have fresh sage, 1 teaspoon of dried sage can be substituted.
Toasting the pecans brings out their nutty flavor and adds a delightful crunch. Toast them in a dry pan over medium heat for 5-7 minutes, or until fragrant.
Adjust the amount of sea salt to your preference. Start with 1/2 teaspoon and add more to taste.
